These pancakes taste and cook up like regular pancakes. Cook them all up and freeze the extra’s, if there are any!
- 4 medium green plantains peeled and cubed (~ 600g)
- 8 eggs large
- 6 TBLS Palm Shortening 84g
- 1 tsp Baking Soda 6g
- 1 tsp Sea Salt 5g
Add all ingredients into Blendtec blender or food processor and blend until smooth.
Sprinkle a pinch of salt in the bottom of the skillet. Pour about ½ cup of batter into skillet and cook until pancake is golden brown on the bottom and there are bubbles scattered across the top of the pancake.
Carefully flip pancake over. Finish cooking until golden brown and pancake is cooked all of the way through.
Place on warm plate and serve with a pat of butter and your favorite topping.
Continue cooking pancakes, adding 1 TBLS of palm shortening and a pinch of salt to your skillet.
